Mix together the oats, all the seeds and nuts, and the cinnamon.
Melt together the coconut oil, the water, and the honey, then stir in the vanilla.
Mix the nut mixture into the oil mixture. Add more oats or water to adjust the mixture if it appears too dry or too wet.
Bake at 325 for 20 minutes on a greased baking sheet, stir, then continue baking another 20 minutes. Repeat as necessary until the granola is slightly brown and dry. Don't overbake, as it will continue to dry as it cools.
Remove from the oven, allow to cool, then add the cherries.
